Tofu and Green Beans
with
Spicy Garlic Ginger Sauce
ingredients:
- 1 lb green beans, washed, trimmed and cut into two
- 1 lb extra firm tofu, pressed for at least one hour, towel-dried and cut into 2 inch cubes
- 2 tbsp coconut oil
- 4 cloves garlic, minced extra fine
- 2 inch piece of ginger root, peeled and grated fine - divided into two
- 1/4 cup dry white wine
- 1/2 cup gluten-free tamari
- 2 heaping tbsp hoisin sauce
- 1 tbsp sriracha, or other favorite hot sauce
- 1 tbsp toasted sesame oil
- 1 tbsp rice wine vinegar
- 1 heaping tbsp cornstarch
- 1/2 tsp white pepper, or more to taste
steps:
1. in a mixing bowl, add tamari, wine, vinegar, hoisin, sriracha, sesame oil, 1/2 of the grated ginger root, white pepper and corn starch and whisk until the cornstarch and pepper have dissolved - then set sauce aside
2. add 1 tbsp coconut oil to a hot wok and when oil is hot, add tofu and cook until crispy brown, then flip tofu so it will brown evenly on all sides - once evenly browned, remove from pan and set aside
3. place wok back onto heat and add 2nd tbsp of coconut oil - when oil is hot add green beans and cook until just tender and beans are still a vivid green color
4. add garlic and last 1/2 of the grated ginger and wok fry until green beans are cooked to desired tenderness
5. add sauce and stir quickly until sauce thickens
6. serve hot over fried rice
