Italian Style Zucchini Salad (Raw, Vegan, Gluten Free, Soy Free)

Italian Style Zucchini Salad-Raw



ingredients:

  • 2 roma tomatoes, seeded and diced
  • 2 medium zucchinis, diced
  • 2 cloves garlic, minced very fine
  • 1 red onion diced
  • 1/4 cup balsamic vinegar
  • 2-3 tsp italian seasoning
  • salt and pepper to taste
  • 1 tbsp olive oil (optional)


preparation steps:


1. place all ingredients in a large bowl and toss gently-leftovers are great-if you have any ;)

Ceviche (Vegan, Gluten Free, Soy Free)

Vegan Ceviche



ingredients:



  • 1 jar hearts of palms, sliced into rings
  • 1 avocado, cubed
  • 1 small red onion, diced
  • 1/2 yellow bell pepper, diced
  • 1 cup cherry tomatoes, quartered
  • juice of 3 limes
  • 1/2 large cucumber, seeded and diced
  • 2 tbsp really good virgin olive oil
  • 1/2 bunch of cilantro, leaves only
  • salt and pepper to taste
  • a dash of cayenne pepper (if you like a little heat)



preparation steps:


1. place all ingredients in a large bowl and toss together gently

2. serve in pretty glass martini glasses
