Ceviche (Vegan, Gluten Free, Soy Free)
Vegan Ceviche
ingredients:
- 1 jar hearts of palms, sliced into rings
- 1 avocado, cubed
- 1 small red onion, diced
- 1/2 yellow bell pepper, diced
- 1 cup cherry tomatoes, quartered
- juice of 3 limes
- 1/2 large cucumber, seeded and diced
- 2 tbsp really good virgin olive oil
- 1/2 bunch of cilantro, leaves only
- salt and pepper to taste
- a dash of cayenne pepper (if you like a little heat)
preparation steps:
1. place all ingredients in a large bowl and toss together gently
2. serve in pretty glass martini glasses
