Ceviche (Vegan, Gluten Free, Soy Free)

Vegan Ceviche



ingredients:



  • 1 jar hearts of palms, sliced into rings
  • 1 avocado, cubed
  • 1 small red onion, diced
  • 1/2 yellow bell pepper, diced
  • 1 cup cherry tomatoes, quartered
  • juice of 3 limes
  • 1/2 large cucumber, seeded and diced
  • 2 tbsp really good virgin olive oil
  • 1/2 bunch of cilantro, leaves only
  • salt and pepper to taste
  • a dash of cayenne pepper (if you like a little heat)



preparation steps:


1. place all ingredients in a large bowl and toss together gently

2. serve in pretty glass martini glasses
