Jasmine Mango Rice Salad Bowl with
Sautéed Mushrooms


ingredients:
  • 4 cups cooked jasmine rice, cooled
  • 1 mango, diced
  • 2 limes, zest and juice
  • 1 red onion, diced
  • 4 scallions, sliced small
  • 1 bunch fresh cilantro, minced
  • 1-2 jalapeño peppers, minced
  • 1-2 tomatoes, diced
  • 1 can black beans, drained and rinsed
  • salt and pepper, to taste
  • sweet red bell pepper, minced
  • 1 cup frozen corn, defrosted
  • 1-2 cloves garlic, minced fine
preparation steps:
1.  add all other ingredients to rice, mix gently
2. serve over shredded romaine lettuce
Sautéed Mushrooms
sauté mushrooms, garlic, and onions in a tiny amount of olive oil, add salt and pepper to taste
