Penne with 
Roasted Peppers, 
Peas & Olives

ingredients:

  • 1 lb of your favorite pasta cooked per package instructions (i used Banza Penne)
  • 1 package frozen peas, thawed
  • 2-3 bell peppers, assorted colors, chopped (i used red and yellow)
  • 2 tbsp olive oil
  • 2-3 medium onions, chopped
  • 4-6 cloves garlic, sliced
  • 2 tbsp vegan butter
  • 1/2 cup kalamata olives, whole and sliced
  • salt & pepper, to taste
  • crushed red pepper flakes, to taste


steps: 

1. preheat oven to 425* and line a baking sheet with parchment paper

2. place peppers and onions on lined baking sheet and drizzle with olive oil and bake in 425* oven until onions begin to become transparent - about 10-15 mins

3. remove baking sheet from oven and add garlic

4. stir to mix in garlic and to flip the peppers and onions

5. place baking sheet back into 425* oven and roast to desired doneness - being careful not to burn the garlic

6. when peppers and onions are done, toss together with hot pasta, vegan butter, olives, peas, pepper flakes and salt & pepper - serve hot
