Salted Caramel Energy Bites
vegan, gluten free, sugar free
ingredients:
- 1/2 cup raw unsalted cashews
- 1/2 cup raw unsalted pecans
- 1 cup pitted medjool dates
- 1/4 cup shredded unsweetened coconut
- 1/4 tsp pink Himalayan salt
preparation steps:
1. place all ingredients in a food processor and pulse until a sticky dough forms (dates can vary in stickiness, so if dough is not sticky enough to hold when pressed together, add a few more dates)
2. roll dough into bite sized balls
3. store in an airtight container in the refrigerate
4. these are seriously delicious!
