John's Mushroom Marsala


John's Mushroom Marsala 

ingredients:

  • 2 tbsp olive oil
  • 2 pints button mushrooms, sliced thin
  • 2 yellow onions, sliced thin
  • 3 cloves garlic, minced
  • 1 to 2 tbsp tomato paste
  • 2 cups vegetable stock 
  • 1 cup Marsala wine
  • salt and pepper to taste
  • flat leaf parsley for garnish
  • 1 tbsp cornstarch
  • 2 tbsp water

steps: 

1. mix cornstarch and water in small bowl and set aside

2.heat olive oil on medium heat

3. when oil is hot, add mushrooms and onions and cook over medium heat - do not move them until they begin to brown, then stir occasionally

4. once the mushrooms are browned add garlic and stir occasionally until garlic is cooked through 

5. add tomato paste, stir in and let cook for a moment

6. add vegetable stock and let reduces a little

7. add Marsala wine  and cook and reduce until alcohol has cooked off

8. add water cornstarch mixture and heat until sauce begins to thicken and remove form heat immediately

Tip:garnish with fresh parsley and serve piping hot with vegan mashed potatoes and a fresh green salad
