Meditaerranean Open-Faced Sandwich

Open-Faced Sandwich
(vegan, gluten free, sugar free)







ingredients:

  • 1 slice per sandwich gluten-free, vegan bread, toasted (a little more difficult to find-but can be found)
  • 1 small eggplant sliced lengthwise in to thin strips (about 1/2 inch thick)
  • 2-3 tbsp (plus more if needed) olive oil
  • 1/4 cup hummus (I made homemade)
  • red chili pepper flakes, to taste
  • salt & black pepper, to taste
  • roasted red pepper slices
  • toasted pine nuts
  • flat leaf parsley
  • kalamata olives 
steps:


1.  salt and pepper each side of eggplant slices, heat a large pan until quite hot and add olive  oil, add eggplant slices to hot oil (do not crowd pan)cook until crispy and golden on both sides, and eggplant is cooked through - eggplant can absorb a lot of oil, so make sure the oil is very hot - add more if needed

2. remove eggplant strips from hot pan and place on a paper towel lined plate and set aside

3.  place a large dollop of hummus on toast and spread thickly and evenly


4. place 1 or 2 eggplant strip on top of hummus, and place 1 or 2 roasted red pepper strips on eggplant, add salt & pepper to taste, garnish with chopped flat leaf parsley, red chili pepper flakes, pine nuts, and kalamata olives
