Red Lentil Stew

Red Lentil Stew

(vegan, gluten free, soy free, nut free, sugar free, corn free)





ingredients:

  • 2 tbsps coconut oil
  • 3 medium yellow onions, diced
  • 4 cloves garlic, minced
  • 1 small eggplant, diced
  • 2 cups dried red lentils, washed and soaked for one hour, then rinsed well and drained
  • 6 medium carrots, peeled & diced
  • 2 medium potatoes, scrubbed and diced
  • 6-8 cups vegetable stock 
  • 28 oz. can of diced tomatoes
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika 
  • 1 tsp red chili pepper flakes
  • cayenne pepper, to taste
  • salt & fresh cracked black pepper, to taste
  • 1 lime - save some slices for garnish
  • fresh cilantro, for garnish



steps:



1.  heat up a large stockpot and add coconut oil and onions and cook until slightly softened


2. add, carrots, potatoes, eggplant, and cook until veggies begin to soften but are not fully cooked


3. stir in spices, and cook while stirring until spices become fragrant


4. add lentils, vegetable stock and diced tomatoes


5. bring to a boil and then turn down to low heat and leave to simmer until vegetables are tender and cooked through


6. serve with a squeeze of fresh lime juice and garnish with cilantro leaves, and a thin slice of lime
