Pecan Blondies


 Pecan Blondies
vegan, gluten free, oil free, refined sugar free

ingredients:
  • 2 & 1/2 cups rolled oats, ground into flour
  • 2 tbsp ground flax seeds
  • 1/4 tsp sea salt (optional)
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 2 cups medjool dates, pitted
  • 1/2 cup all natural peanut butter
  • 2 cups unsweetened plant-based milk (I used oat milk) 
  • 2 tsp vanilla extract
  • 1 cup chopped pecans


preparation steps:

1. preheat oven to 350* F

2. in a high speed blender grind oats to flour and add oat flour, flax, salt, baking soda and baking powder to a large mixing bowl

3. in same high speed blender (no need to wash or rinse in between), blend plant-based milk, dates, peanut butter and vanilla until smooth and creamy

4. stir wet ingredients into bowl with dry ingredients

5. add pecans

6. pour batter into parchment paper lined brownie pan and smooth with spatula

7. bake at 350* F until knife inserted into center comes out clean (approximately 30-40 minutes)
