Key Lime Pie (Raw)


 Key Lime Pie


ingredients for the crust:

  • 1 cup mixed raw nuts (almonds, cashews, walnuts and macadamia nuts)
  • 1 cup medjool dates (pitted)



preparation steps for crust:




1. place in food processor fitted with an S blade and process until dough holds together when pinched between your fingers

2. press dough firmly into the bottom of a spring form pan,  making sure to go partway up the sides of the pan

3. place in freezer while preparing filling


ingredients for the filling:

  • 3 large, ripe avocados
  • 1/2 cup agave
  • 1/4 cup coconut oil
  • juice of two juicy limes
  • 1 or 2 drops of lime oil(optional)

preparation steps for filling:

1. place all filling ingredients in a food processor fitted with an S blade - process all filling ingredients until smooth - scraping sides of bowl

2. pour filling into spring form pan over crust and place in freezer for at least two hours - overnight is best (good luck with that!)

3. garnish with a sprinkling of dried coconut flakes and thinly sliced (I used a mandolin) limes
