Moroccan Chickpea Stew (Vegan, Gluten Free, Soy Free)

Moroccan Chickpea Stew


ingredients:


  • 2 large yellow onions
  • 2 tbsp olive oil
  • 4-6 cloves garlic
  • 1/2 tsp cayenne pepper
  • 1/2 tsp crushed red pepper flakes
  • 1 tsp cinnamon
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 bay leaf
  • 2 cans chickpeas
  • 1 large can diced tomatoes
  • 1/2 cup golden raisins
  • 1 package frozen spinach
  • 1 bunch basil leaves
  • salt and pepper to taste


preparation steps:

1. saute onions in oil until softened and transparent

2. add spices and saute until just toasted a bit

3. add chickpeas and diced tomatoes-cook until heated through

4. add spinach and basil

5. serve hot over rice
