Creamy Sweet Corn and Spicy Jalapeno Chowder - Vegan

Creamy Sweet Corn 
 Spicy Jalapeno Chowder
  • 1 tbsp olive oil
  • 1 tbsp vegan butter
  • 2 medium onions, diced
  • 1 or 2 jalapeños, seeded and sliced into thin rings 
  • 2-3 celery ribs, diced
  • 2-3 carrots, peeled and diced
  • 4-6 peeled potatoes, diced
  • 2 cups or more vegetable stock or more
  • 3 cups plant soy milk (or your choice of plant-based milk)
  • 1 can coconut milk
  • 2 tbsp vegan sour cream (optional)
  • 1 can golden corn (optional-but adds great flavor)
  • 1 bag frozen corn
  • sea salt, to taste
  • white or black pepper, to taste
 preparation steps:

1. in a large pot, sauté onions, carrots, celery, and jalapeños in olive oil and vegan butter until tender

2.add potatoes and just cover with vegetable stock

3. bring to a boil and reduce heat, simmer until potatoes and carrots are fork tender

4. add coconut milk, soy milk, vegan sour cream, canned corn, frozen corn and salt and pepper

5. serve piping hot with either bread and vegan butter or oyster crackers

tip: cilantro makes a lovely garnish for this chowder
