Vegan Sushi Salad
Vegan "Sushi" Salad
ingredients for salad:
- 1 to 2 c washed and dried romaine lettuce, cut into bite sized pieces
- 1/2 c cooked white rice, cooled
- 1/4 c red cabbage, shredded
- 1/2 medium sized carrot, shredded
- 1/4 to 1/2 avocado, sliced
- 1/8 cucumber, peeled and sliced thin
- pickled ginger, to taste,
- toasted nori seaweed, sliced thin, to taste
- wasabi, to taste
- toasted sesame seeds (I like the black ones because they are pretty)
Preparation steps:
1. Place lettuce in bowl
2. add rice
3. in sections add carrots, cabbage, cucumber, avocado
4. drizzle on dressing (see recipe below)
5. garnish with wasabi, pickled ginger, and sprinkle on sesame seeds
ingredients for dressing:
- 2 t rice wine vinegar, unseasoned
- 1 t tamari or soy sauce
- a drizzle of toasted sesame oil
preparation steps:
1. whisk all together and set aside
