Gardein Golden Fishless Filets with
Pico de Gallo,
Spicy Black Beans
and
Rice
ingredients:
- 1 package Gardein Frozen Golden Fishless Filets, cooked per package instructions
- 2 large tomatoes,seeded and diced
- 1 large red onion, diced
- 5 clove garlic, minced fine
- 1 jalapeno pepper, minced fine (seeded for milder, with seeds for spicier)
- juice of 2 or 3 limes
- salt and black pepper, to taste
- 1 tbsp olive oil
- 1 tsp olive oil (optional for pico de gallo)
- 1/2 cup fresh cilantro, chopped
- 1 large can black beans, rinsed and drained
- 1 large yellow onion, diced
- 1 tbsp tomato paste
- 1 cup vegetable stock
- 1 tsp red pepper flakes
- 1/4 tsp cayenne pepper
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp oregano
- 1 tbsp cumin
- 2 tsp of your favorite hot sauce
- salt and pepper, to taste
- lime wedges, for garnish
steps - pico de gallo:
1. add tomatoes, red onion, 1 clove minced garlic,jalapeno, lime juice, 1 tsp olive oil (optional), cilantro and hot sauce, salt and pepper to taste to a large bowl and toss gently-set aside
steps - spicy black beans:
1. on medium heat add 1 tbsp olive oil to a large sauce pan and add yellow onions cook until transparent and then add 4 cloves diced garlic and saute until tender
2. add cumin, red pepper flakes,cayenne, garlic powder, and chili powder and saute until spices become aromatic
3. add tomato paste and stir in
4. add black beans, vegetable stock, oregano and hot sauce and salt and pepper to taste
5. bring to a boil and immediately turn heat to low to keep beans warm until ready to serve
Tip:
serve with rice and lime wedges
