Plant Based Nacho Cheese Sauce
ingredients:
- 2 medium thin-skinned (or peeled) yellow potatoes, cut into chunks
- 1/2 medium yellow onion, cut into chunks
- 1 1arge or 2 small carrots, cut into chunks
- 2 cloves garlic, peeled
- 1 whole roasted red pepper
- 1/4 cup nutritional yeast
- 1/4 cup raw cashews
- 1 tsp fresh lemon juice
- 1/2 tsp sea salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tbsp arrowroot powder
- dash of hot sauce (to taste)
preparation steps:
1. place potato, carrot, and onion chunks into a small saucepan with the garlic cloves, and just cover with cold water - bring to a boil
2. lower heat under saucepan and let simmer until vegetables are fork tender and cooked through
3. add hot vegetable mixture with liquid (should be about a cup or so of liquid)to a high-speed blender with all other above ingredients and blend until smooth and creamy
*Serve warm over tortilla chips, roasted potato wedges, or steamed broccoli-or toss with cooked elbow macaroni for a delicious and easy mac'n'cheese
