Creamy Oats & Berries
Breakfast Parfait
ingredients:
- 1/2 cup raw cashews
- 3 medjool dates, pitted
- 1 tsp ground cinnamon
- 1 cup cold water
- 1/2 cup (hefty) uncooked rolled oats
- 1 tbsp chia seeds
- 1 cup frozen (or fresh) berries
- 1 tbsp pure maple syrup (optional)
- walnuts, for garnish (optional)
preparation steps:
1. add cashews, dates, cinnamon and water to a high-speed blender (soak cashews overnight if you are not using a high-speed blender) - blend until silky smooth
2. add uncooked rolled oats and chia seeds and blend a little bit more, leaving a little bit of texture
3. cook berries in a saucepan, over medium heat, until the berries are hot and the berry juices flow - if desired, add maple syrup
4. layer oats mixture and berries into two mason jars, and if desired, sprinkle walnuts on the top of each to garnish - serves two
