Chocolate-Bomb Plant-Based Brownies

Plant-Based 
Fudge Brownies

ingredients:
  • 2 flax eggs (2 tbsp ground flax mixed with 6 tbsp water and let sit for 5 minutes)
  • 3/4 cup coconut sugar
  • 1/2 cup avocado oil
  • 2 tsp pure vanilla extract
  • 1/4 cup cold water
  • 1 cup organic blanched almond flour
  • 3/4 cup unsweetened cocoa powder
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 1/4 cup plant-based chocolate chips(plus extra for brownie topping)
  • 1 tsp coconut oil (for greasing pan)

preparation steps:

1. preheat oven to 350*f and parchment-paper line, and grease a brownie pan (I used a little coconut oil)

2. in a large bowl beat together flax eggs, oil, water, vanilla, and sugar until well combined

3. add dry ingredients to wet ingredients and mix until all ingredients are well incorporated 

4. stir in 1/4 cup chocolate chips and pour batter into greased, lined brownie pan - bake for about 30-35 minutes or until brownies are set

5. immediately upon removing brownies from oven, sprinkle additional chocolate chips over hot brownies, and spread evenly over top with a spatula as the chips melt

6. let cool for at least 2 hours 
(I refrigerated mine) and cut into even squares with a sharp knife - wet your knife if needed, to keep from sticking to the brownies
