Hasselback Potatoes with Fresh Dill







Hasselback Potatoes 
with 
Fresh Dill


ingredients:

  • 6 large potatoes, scrubbed
  • 2 tbsp good extra virgin olive oil
  • sea salt, to taste
  • 1/2 cup fresh dill, minced

steps:  

1. preheat oven to 425* slice potatoes in half lengthwise and place hump side up on your cutting board

2. with a very sharp knife, slice thin slices across the top, being careful not to go all the way through the potato

3. line a baking sheet with parchment paper and drizzle one tbsp olive oil on the paper

4. place the sliced potatoes on the oiled paper and drizzle the second tbsp of olive oil over the top letting it drip into the slices 

5. sprinkle with sea salt and bake until potatoes are crispy on the outside and tender on the inside

6. remove from oven and sprinkle generously with fresh dill
