John's Vegan Irish Stew
John's Vegan Irish Stew
(serves 4 generously)
ingredients:
- 4 medium yellow onions, diced into large chunks
- 2 tbsp olive oil
- 4 cups vegetable broth
- 1 1/2 cups dry red wine
- 2 large portobello mushroom caps, diced into large chunks
- 3 large carrots, peeled and diced into large chunks
- 2 medium turnips, diced into large chunks
- 3 stalks celery, diced into large chunks
- 1 cup red lentils, rinsed well
- 1/2 cup parsley, minced
- 1/4 cup apple cider vinegar
- 2 bay leaves
- 1/2 tsp thyme
- 1/2 tsp rosemary, ground
- sea salt & black pepper, to taste
steps:
1. add olive oil and onions to a stockpot and turn heat on to medium - saute onions until they begin to become transparent - stirring often - do not brown
2. add half of red wine to the transparent onions and lower to med-low and saute, stirring often, until alcohol evaporates
3. add celery, carrots, turnip and mushrooms and saute for a few minutes stirring often
4. add the rest of red wine and saute again, stirring often, until alcohol evaporates
5. add rinsed lentils, vegetable stock, bay leaves, rosemary, thyme, half of the minced parsley and salt and pepper
6. lower heat to low and let simmer, stirring occasionally, until vegetables are tender and lentils are cooked and tender
7. serve warm with a side of oven roasted potatoes or over mashed potatoes and garnish with the rest of the minced fresh parsley
