Chia Seed Pudding (Raw, Vegan, Gluten Free)

Chia Seed Pudding
  • 1/3 cup chia seeds
  • 2 cups nut or seed milk (I made my own hemp seed milk)
  • 1/2 vanilla bean
  • 1/2 cup sweetener (I used about 6 large medjool dates)
  • 1/4 cup dried shredded coconut
  • 1 large banana, sliced
  • 1 orange, sliced
  • 2 tablespoons cashew nuts, chopped rough
  • 1 very tiny pinch of himilayan pink salt
preparation steps:
1. in a high speed blender, blend hemp milk with medjool dates, vanilla bean, and pink salt
2. in a bowl mix coconut shreds and chia seeds, with contents of blender, and stir well to combine
3. transfer to smaller cups if individual portions are desired
4. let chill, covered, overnight (or for at least five hours)
5. serve chilled with a layer of sliced  oranges, a layer of sliced bananas (or your favorite fruit)and sprinkle cashews on top
