Vegan Seitan Gyro
with
Tzatziki
ingredients:
- mediterranean style flatbread or pita, toasted
- marinated seitan (marinated seitan recipe below)
- lettuce,shredded
- tomatoes, seeded and diced
- red onion diced
- cucumber, seeded and diced
- kalamata olives
- roasted red peppers
- vegan tzatziki sauce (recipe below)
steps:
1. toast pita or flatbread
2. add the following to the bread: lettuce, seitan, tomatoes, roasted peppers, red onion, cucumber, olives and drizzle tzatziki over the top
Marinated Seitan
ingredients:
- 1 package of seitan strips
- 4 tbsp tamari or soy sauce
- 1 tbsp ketchup
- 1 tsp yellow mustard
- 2 tbsp olive oil - reserve 1 tbsp for cooking seitan
- 1-2 cloves garlic minced
- 1 tbsp onion diced fine
- 1 tbsp maple syrup
- dash of liquid smoke (optional)
- 1 tsp onion powder
- 1 tsp garlic powder
- 1-2 tbsp fresh lemon juice
steps:
1. add all ingredients to a flat shallow storage container with a cover
2. cover and give a good but gentle shake making sure that all the seitan is well covered in the marinade
3. let sit overnight in refrigerator - or at least 3 hours - shaking gently occasionally
4. Remove from fridge and add seitan to a hot oiled skillet - do not move or stir until seared - then turn once and let sit until done on both sides, add the rest of the marinade and cook until it thickens slightly and coats the seitan - stirring occasionally
5. remove from heat and set aside until ready to build your gyro
vegan tzatziki
ingredients:
- 1 cup coconut plain yogurt
- 1 cup vegan sour cream
- 1 large cucumber, peeled, seeded and grated
- 3-5 cloves garlic, minced fine
- juice of 1 lemon
- 1/2 cup minced fresh dill
- salt and pepper to taste
steps:
1. add all ingredients to a mixing bowl and mix together well
