Hummus & Roasted
Veggie Pizza
ingredients:
- 1 pizza dough/or pizza crust of your choice
- 1 small summer squash or zucchini
- 1 carrot, peeled
- 1 red onion
- 1 red bell pepper
- 1 tomato, diced
- 1 large handful baby arugula, roughly chopped
- 1/2 cup mixed pitted kalamata & large green olives,sliced
- 6 cloves garlic, minced
- 1 cup hummus
- salt & pepper, to taste
steps:
1. bake pizza crust at 350* until desired crispiness and remove from oven and set aside (if you use a pizza dough instead of a pre-baked crust, place fork holes evenly over the surface, to prevent crust from bubbling up and keep crust nice and flat)
2. turn oven up to 425*
3. slice squash, red onions, red pepper, carrot thin (i used a mandolin) and place on a lightly olive-oiled sheet pan (I used parchment paper too)with minced garlic and add a little salt & pepper - roast at 125* until veggies are tender and starting to turn golden and crispy--then remove from oven and set aside
5. once the roasted veggie mixture has cooled slightly, add the arugula, tomatoes and olives and mix in
4. spread hummus evenly on pizza crust
5. spread veggie mixture evenly over hummus
variation:
gluten-free crust and added diced cucumbers, scallions and fresh dill weed
hint:
all of these separate parts can be prepared in advance and the pizza assembled when you are ready to eat
