Vegetable Green Curry

Vegetable Green Curry


ingredients:

  • 1 tbsp coconut oil
  • 2 yellow onions, sliced
  • 1 thumb size piece of fresh ginger root, peeled & grated
  • 6 cloves garlic, minced fine
  • 1 green bell pepper, sliced
  • 1 bunch asparagus, washed, tough ends removed, sliced into 1 inch pieces
  • 2 large carrots, peeled, sliced thin on the diagonal
  • 2 small zucchini, sliced into half moons
  • 4 tbsp green curry paste
  • 1 can full fat coconut milk
  • 1-2 large handfuls spinach leaves, washed, roughly chopped  
  • 1 lime, juiced
  • 1/2 lime, sliced thin--for garnish
  • crushed red pepper flakes, to taste
  • sea salt & white pepper, to taste
  • 6 scallions, cut into 1 inch pieces
  • 1 handful, fresh basil leaves
 
 

steps:

1. heat a large saucepan and add coconut oil 

2. add onions, carrots and saute until almost tender

3. add asparagus, bell peppers, zucchini, scallions, garlic and ginger and saute until vegeatables are tender

4. add pepper flakes, green curry paste and stir to coat vegetables

5. add coconut milk and simmer until all the vegetables are tender

6. add basil leaves and salt, white pepper  and lime juice, to taste

7. serve warm over jasmine rice and garnish with fresh lime slices
