Lentil Stew

ingredients:

  • 2 medium yellow onions, diced
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 3 yukon gold potatoes, diced
  • 3 cups vegetable stock
  • 2 cups green lentils, rinsed well
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 small summer squash, diced
  • 2-3 cups baby spinach leaves
  • 1-2 tbsp tamari
  • salt & pepper, to taste


 steps:

1. add diced onion, potato, carrot and celery to a stockpot and just cover with water - then bring to the boil

2. add summer squash, vegetable stock, lentils, bay leaves, thyme, and tamari and simmer until vegetables and lentils are tender-add more water if needed and /or to get desired consistency

3. add spinach and stir in to wilt

Tip: serve with your favorite hot sauce
