Sweet Potatoes

ingredients:
- 4 sweet potatoes, scrubbed, fork-poked
- 1 can black beans, rinsed and drained
- 1 bag frozen corn, thawed
- 1 tomato, diced
- 1 red onion, diced
- 1 fresh jalapeno pepper,minced (optional)
- 1 small bunch, cilantro, washed, chopped reserve some for garnish
- 2 limes, juiced
- 2-4 dashes of your favorite hot sauce
- salt and black pepper, to taste
- 1 large avocado, quartered, and sliced
steps:
1. bake sweet potatoes on a parchment lined baking sheet in a preheated 425* oven until well done-then remove from oven and set aside
2. while potatoes are baking, except for avocado and reserved cilantro garnish, mix everything together in a mixing bowl and set aside
3. place each potato on a plate and cut into the top of the sweet potatoes and spread the skin slightly out
4. scrape the inner part of the sweet potato to loosen it a little
5. spoon an even amount of the bean and corn mixture into each potato
6. place 1/4 of the avocado slices over each and a sprig of cilantro and serve
tip: serve with your favorite tortilla chips
