Penne Alfredo with Peas



ingredients:

  • 1 lb. penne, cooked according to package instructions
  • 2 tbsp vegan butter
  • 1 bag frozen peas
  • 1 cup unsweetened oat milk, or any other unsweetened plant-based milk of choice (plus more if needed)
  • 1/4 cup nutritional yeast
  • 1 tbsp fresh squeezed lemon juice
  • 1 tsp lemon zest (optional)
  • 1 tsp garlic, minced very fine
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp ground mustard 
  • 2 tsp flour or cornstarch (or other sauce thickener)
  • salt and pepper, to taste

steps:

1. add the flour or cornstarch to milk and mix well to make a slurry - set aside

2. in a sauce pan, on medium heat, melt butter and add minced garlic and sauté until cooked through - but not browned at all

3. add milk slurry mixture, nutritional yeast, mustard, garlic and onion powder, lemon juice, lemon zest and salt and pepper

4. bring sauce to a boil, stirring constantly until sauce thickens, add frozen peas and salt and pepper to taste - and keep on heat until peas are warmed through - adding extra milk if needed

5. toss cooked penne in sauce - serve hot
