Penne Alfredo with Peas
Penne Alfredo with Peas
ingredients:
- 1 lb. penne, cooked according to package instructions
- 2 tbsp vegan butter
- 1 bag frozen peas
- 1 cup unsweetened oat milk, or any other unsweetened plant-based milk of choice (plus more if needed)
- 1/4 cup nutritional yeast
- 1 tbsp fresh squeezed lemon juice
- 1 tsp lemon zest (optional)
- 1 tsp garlic, minced very fine
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp ground mustard
- 2 tsp flour or cornstarch (or other sauce thickener)
- salt and pepper, to taste
steps:
1. add the flour or cornstarch to milk and mix well to make a slurry - set aside
2. in a sauce pan, on medium heat, melt butter and add minced garlic and sauté until cooked through - but not browned at all
3. add milk slurry mixture, nutritional yeast, mustard, garlic and onion powder, lemon juice, lemon zest and salt and pepper
4. bring sauce to a boil, stirring constantly until sauce thickens, add frozen peas and salt and pepper to taste - and keep on heat until peas are warmed through - adding extra milk if needed
5. toss cooked penne in sauce - serve hot
