Curried Vegetables
ingredients:
- 2 tbsp coconut oil
- 2 medium onions, sliced
- 1 small cauliflower or 1/2 large, cut into florets
- 2 cups broccoli florets
- 2 carrots, peeled and slice on the diagonal
- 2 stalks celery, sliced on the diagonal
- 1 zucchini, cut into 1 inch cubes
- 1 summer squash, cut into 1 inch cubes
- 1 yellow & 1 green bell pepper, sliced
- 4 cloves garlic, minced
- 1 thumb size piece of ginger, sliced thin
- 2 cans coconut milk
- 1 large can, diced tomatoes
- 2 tbsp good curry
- 1 tsp crushed red pepper flakes
- 1 tsp ground ginger
- 1 lime, juiced
- 1 tsp white pepper & salt to taste
steps:
1. add coconut oil to a large heated stockpot
2. add onions and saute until they just start to turn transparent
3. add all of the vegetables - adding ginger and garlic last - and saute until vegetables just begin to become tender
4. stir in all spices and cook until spices become fragrant
5. add coconut milk and diced tomatoes and bring to the boil
6. immediately lower the heat to medium-low and let simmer until vegetables are tender
7. serve in your favorite bowl over warm jasmine rice
