Creamy Mushrooms and Spinach
over Rice
ingredients:
1 tbsp cornstarch
1 tbsp olive oil
1 and 1/2 cups unsweetened, plant-based milk (i used oat milk)
1 tbsp olive oil
1 pint bella or crimini mushrooms, sliced
1 medium yellow onion, chopped
2 cloves garlic, minced fine
2 cloves garlic, minced fine
5 oz. container baby leaf spinach
1/4 cup nutritional yeast
1/4 tsp white pepper
sea salt, to taste
steps:
1. combine oat milk and cornstarch to make a slurry and set aside
2. heat a skillet on medium and add olive oil
3. add onions and mushrooms and saute until caramelized
4. add garlic and start to cook
5. add spinach and cook until wilted
6. add milk-cornstarch slurry and nutritional yeast, white pepper, and sea salt while stirring constantly until sauce thickens and is hot
7. serve hot over warm jasmine rice
