Easy Vegan Meatballs with Roasted Onions & Peppers


ingredients: 

  • 1 tbsp olive oil
  • 1 or 2 bag gardein classic meatless meatballs 
  • 2 red onions, sliced
  • 1 each, green, red, yellow bell pepper, cut into squares
  • 3 cloves garlic, minced
  • 2 tsp fennel seeds, ground
  • salt & pepper, to taste

steps:

1. preheat oven to 425*

2. line a large baking sheet with parchment paper and spread onions, peppers and frozen meatballs and drizzle with olive oil, mix well

3. roast in 425* oven for 15 minutes and remove and add garlic and ground fennel seed and mix well

4. place back into 425* oven until veggies are roasted and caramelized

5. add salt and pepper, to taste

tip: serve with rice, pasta, mashed potatoes or in a sub roll with melted vegan provolone, or add a can or jar of your favorite marinara sauce - or any other way you like!
