Tofu Scramble

Tofu Scramble


1 block firm tofu
2 tsp olive oil
1 yellow onion diced small
2 medium carrots, peeled and diced small
2 to 3 cloves garlic, minced fine
1 red bell pepper, diced  small
2 leaves kale, chiffonade
1/2 cup fresh or frozen corn kernals
1 tsp cumin
1 tsp turmeric
salt and pepper to taste

preparation steps:

1. place oil in hot skillet

2. when oil is heated add onions and carrots and saute until tender

3. add red peppers, garlic and kale ans saute until kale is tender - about 3 or 4 minutes

4. add tofu and crumble with fork in pan

5. add spices and corn and stir together to blend all ingredients and get corn heated through

6. serve hot with toast (and lots of ketchup for me)
