Skillet Cornbread (Vegan)
Vegan Skillet Cornbread
ingredients:
- 1 1/2 cups soy milk
- 2 tbsps fresh lemon juice
- 1 2/3 cups flour
- 4 tsp baking powder
- 1 tsp salt
- 2 scallions, diced
- 1 jalapeno pepper, diced
- 1 cup frozen corn, thawed
- 1/2 cup olive oil
- 1/2 cup maple syrup
preparation steps:
1. preheat oven to 375 degrees
2. grease skillet and place in oven to warm
3. place all dry ingredients in a mixing bowl
4. add wet ingredients and mix until combined
5. pour batter into greased, hot skillet and bake for 30 minutes or until nicely browned
6. serve warm with vegan buttery spread
