Salad
ingredients:
- 1 bunch kale, chiffonade
- 4 carrots, washed, peeled and grated
- 1 small red onion, sliced very thin
- juice of 1 or 2 lemons
- 2 tsp olive oil
- 2 cloves garlic
- salt and pepper to taste
- pine nuts, for garnish
preparation steps:
1. place kale chiffonades in a large bowl with lemon juice and massage between fingers until soft
2. add all other ingredients except pine nuts and toss
3. garnish with pine nuts
