Massaged Kale and Carrot Salad (Raw, Vegan, Gluten Free)




Massaged 
Kale and Carrot 
Salad



ingredients:


  • 1 bunch kale, chiffonade
  • 4 carrots, washed, peeled and grated
  • 1 small red onion, sliced very thin
  • juice of 1 or 2 lemons
  • 2 tsp olive oil
  • 2 cloves garlic
  • salt and pepper to taste
  • pine nuts, for garnish



preparation steps:


1. place kale chiffonades in a large bowl with lemon juice and massage between fingers until soft

2. add all other ingredients except pine nuts and toss

3. garnish with pine nuts
