Vegan Falafel Stuffed Pitas with Tahini Lemon Sauce

Vegan Falafel Stuffed Pitas 
with 
Tahini Lemon Sauce 

ingredients for falafel:

  • 2 15oz cans chickpeas, drained and rinsed
  • 4 garlic cloves
  • 1 medium onion or 4 to 5 scallions
  • 1 small bunch parsley or cilantro
  • 1/2 cup chickpea flour - more if needed
  • 2 tsp cumin
  • 1 tsp coriander
  • 2 tsp turmeric
  • 1 tsp cardamom
  • salt and pepper to taste
  • 2 to 3 tbsp olive oil for cooking

preparation steps for falafel:

1. add garlic to food processor while running

2. add onion and parsley or cilantro

3. add  chickpeas and process until smooth

4. add spice

5. add flour until consistency is correct for forming small balls

6. add balls to olive oil in hot skillet flattening balls a little as you place them

7. fry and flip until golden brown on both sides

8. remove onto paper towels to drain oil
 

ingredients for tahini lemon sauce

  • 1 cup tahini
  • 1-2 cloves garlic
  • juice and zest of 2 lemons
  • water
  • salt and pepper to taste

preparation steps for tahini lemon sauce:

1. add garlic to running processor and process until minced fine

2. add tahini and lemon juice and zest, and salt and pepper and process until smooth - scraping down sides of processor 

3. add water until sauce is the consistency that you desire 

ingredients for falafel pita sandwich:

  • whole wheat pitas
  • lettuce leaves
  • falafel
  • cucumber, diced
  • tomato, diced
  • red onion, diced
  • tahini lemon sauce


preparation steps for sandwich:


1. slice whole wheat pitas in half

2. stuff pitas with lettuce, diced cucumber, diced tomato and diced red onion,  

3. add falafel and a dollop of tahini lemon sauce

tip: I like a splash of hot sauce on mine ;)
