Tofu Vegetable Pot Pie (Vegan)




 Vegan Tofu Vegetable
Pot Pie



ingredients for crust:

  • 2 cup flour
  • 2 stick or 1 cup frozen earth balance vegan buttery sticks
  • ice water


ingredients for filling:

  • 8 ounces super or extra firm tofu
  • 3 tbsps olive oil, divided
  • 2 medium yellow onion, diced
  • 3 celery rib, diced
  • 2 carrot, diced
  • 4 cloves garlic, crushed 
  • 2 russet potato, diced
  • 1 small head broccoli florets, cut small
  • 1 pint baby bella mushrooms, cut into small pieces
  • 1/4 cup all-purpose flour
  • 3 tbsp nutritional yeast
  • 3 tbsp tamari
  • 1 1/4 cups "no-chicken" broth
  • 1 cup frozen peas
  • 1 tsp dried sage
  • 1 tsp dried rosemary
  • 1 teaspoon dried thyme
  • salt and pepper



preparation steps for crust :
(part 1) 

1. place earth balance vegan buttery sticks, flour and food processor blade in the freezer to chill,  while you  prepare filling



preparation steps for filling:


1. preheat oven to 400 degrees

2. cut tofu into small cubes and dry on paper towels 

3. heat 1 tbsp olive oil in  large skillet over medium heat and cook tofu until golden

4. remove tofu from skillet and set aside

5. heat remaining 2 tbsps of olive oil in the same skillet and add onion, celery, carrot, broccoli, mushrooms and garlic and saute until onions are translucent

6. add potato to  skillet and cook, stirring frequently, until tender

7. add flour, nutritional yeast, and tamari and stir into vegetables

8. add "no-chicken" broth

9. add tofu, peas, sage, rosemary and thyme

10. remove from heat , add salt and pepper to taste

11. set aside while finishing crust




preparation steps for crust:
(part 2) 


1. remove earth balance vegan buttery sticks, flour and food processor blade from freezer

2. cut earth balance into smaller cubes or slices and add to the flour in a food processor with chilled blade and pulse until it resembles coarse meal

3. gradually drizzle ice water into the bowl of processor while pulsing - stop  as soon as dough just comes together

4. remove dough onto floured work space using your hands shape into ball and flatten into a disc - do not handle too much!

5. roll out dough to 1/8 inch thick



preparation steps - assemble and bake:


1. place filling into deep pie dish

2. place a dough over top and roll sides under to form  thicker edge crust

3. press and crimp edges

4. make cut in crust for steam

5. bake until golden - around 30 minutes

6. let rest for 10 minutes before serving
