Vegan Chili
Vegan Chili
ingredients for chili:
- 2 tbsp olive oil
- 2 medium yellow onions, sliced
- 4 stalks celery, cubed
- 1 red sweet bell pepper, cubed
- 1 green bell pepper
- 6 to 8 cloves fresh garlic
- 1 bunch kale, cut into bite sized pieces
- 1 14.5oz can diced tomatoes
- 1 14.5 oz can whole tomatoes
- 1 28oz can crushed tomatoes
- 2 15oz cans kidney beans, drained and rinsed
- 1 heaping cup uncooked cracked bulgur wheat
- 1 tbsp cumin
- 2 tbsp chili powder
- salt and pepper to taste
note* you can use 1 envelope of chili seasoning in place of all other spices
preparation steps:
1. in a stockpot saute onions, garlic and celery
2. add bell peppers and kale and saute until cooked
3. add spices,tomatoes, beans and bulgur
4. simmer until bulgur is cooked
