Vegan Chili

Vegan Chili


ingredients for chili:

  • 2 tbsp olive oil
  • 2 medium yellow onions, sliced
  • 4 stalks celery, cubed
  • 1 red sweet bell pepper, cubed
  • 1 green bell pepper
  • 6 to 8 cloves fresh garlic
  • 1 bunch kale, cut into bite sized pieces
  • 1 14.5oz can diced tomatoes
  • 1 14.5 oz can whole tomatoes
  • 1 28oz can crushed tomatoes
  • 2 15oz cans kidney beans, drained and rinsed
  • 1 heaping cup uncooked cracked bulgur wheat
  • 1 tbsp cumin
  • 2 tbsp chili powder 
  • salt and pepper to taste
note* you can use 1 envelope of chili seasoning in place of all other spices

preparation steps:

1. in a stockpot saute onions, garlic and celery

2. add bell peppers and kale and saute until cooked

3. add spices,tomatoes, beans and bulgur

4. simmer until bulgur is cooked
